On the cool, chalky soils overlooking the Garonne, François Mitjavile has produced a wine that shakes things up. Domaine de Cambes, a confidential estate which for a long time remained in the shadow of the great names, has now established itself as one of the best ageing secrets on the Right Bank. The colour is a deep purple, almost black. The nose is captivating from the outset: plum jam, wild blackberries, cedar, camphor and smoked meat combine in raw sensuality. On the palate, this is a dense, fleshy, vibrant wine, with solid tannins and a subtle freshness that balances the whole and prolongs the long, earthy, gripping finish. From a late-ripening terroir with a long vegetative cycle, this Cambes 2022 has not been rushed. Meticulous ageing, without temperature-controlled, with regular racking and total control of oxygen, gives the wine all its expressiveness. A cuvée that combines generous fruit and a deep texture, in the purest Mitjavile style. At the table? A creamy chicken risotto, a rare duck breast, or even a red fruit crumble. Cambes loves contrasts.
