Winemaker’s Notes

On the nose, the wine shows notes of white flowers, citrus, and ripe green peppers. On the palate it is buttery with notes of green pepper, grapefruit, and just a hint of anise. The wine has a long, fresh, and well balanced finish.

The grapes are harvested at peak of ripeness in the early morning to retain fruit characteristics. The grapes are subjected to a light maceration and then pressed with a pneumatic press. Fermentation takes palce at 16 degrees celsius after a clean racking of the must. Before bottling, the wine is lightly fined and put through a cold stabilization process which will ensure it remains bright, limpid, and sediment free.

The wine is ready to be enjoyed now. Serve chilled as an aperitif or enjoy with white meat, grilled fish and sauce, and soft cheese such as Morbier, Mont d’Or, or Livarot.
