The 2022 Bourgogne Côte d’Or, made from fully destemmed grapes, underwent a 14-month maturation period in oak barrels. On the palate, this medium-bodied wine presents a round and smooth texture, delivering appealing flavours of ripe red cherries, raspberry, and subtle mint, underscored by notes of fresh herbs and spice. Its core appeal lies in its excellent fruit expression, supple feel, and harmonious balance.

STORY BEHIND THE WINE

Totally destemmed, Thierry’s pinots go through a cold soak of a few days before wild yeast fermentation takes place in open vats. Extraction is very gentle, and this wine only sees old oak ageing for more than a year, and then a further 3-6 months in cuve. Pinches of sulphur are only added after the malolactics are completed and at bottling, reaching around 30mg total.
