On the palate, it is creamy, energetic and warm, focusing on the fruit, then gradually taking on more profound bass notes. Dom Pérignon 2002 is a magnetic, still-elusive wine that fully reveals the nature of this legendary House.rrDom Pérignon 2008: Rich fruit. Nose is quite forward, with that trade mark match-strike smokey character subtly coming through. Smokey bacon, pineapple and guava on the palate with underlying ripe lemons and bright red apples, all wrapped around a texture from long lees ageing. Finishes very fresh and light, dances on the palate with a hint of that saline and twist of bitterness which really help balance the delicacy and finish. rrDom Pérignon 2012:A vintage of both freshness and density, the nose is so welcoming with DP’s hallmark smoky charm, deeply fruity. The wine’s most unique feature is the scintillating or tingling sensation that takes over and energises the rich, round and compact palate.
