Davy Dosnon is one of the finest vignerons in the Grower Champagne movement, and this stunning sparkling wine embodies everything that makes him such a special winemaker. Crafted entirely from Pinot Noir grown in a single vineyard in Avirey-Lingey, this zero dosage bottling was vinified entirely in neutral Burgundy barrels before spending 36 months ageing in bottle. Bottled unfined, unfiltered, and without any sulphites, this beautiful Champagne is defined by notes of green apple and vanilla, alongside subtle hints of matchstick reduction and vanilla. Tremendously long on the finish, this is a juicy Champagne with lots of mineral intrigue.
