Nowadays the company owns agaves in the Jalisco Highlands, near the towns of Atotonilco and Tototlan. Self proclaimed as one of Tequila’s ‘best kept secretsâ€? the style is described as semi-modern, made using autoclaves and roller mills, but with ferments in open cement tanks. The producers claim wild yeasts from the mango trees surrounding the distillery add additional character to the ferment.
