Spring flowers, a swirl of pineapple, just ripe stone fruit, with candied lemon, lime zest, peach cobbler and wet stones – something distinctly ‘rocky’ about it. There’s so much fruit capering on the palate with good old fashioned tuck shop sweets – think rhubarb and custard sweets, with some green melon, pithy grapefruit and a long, sherberty finish.
