In both Histoire d’A and La Savante, the estate uses whole bunches during fermentation to enhance the texture and grain of the wines. Histoire d’A is more generous because of its greater exposure to the sun, offering aromas of cinnamon and cloves. The nose is full of red fruit, with herbs such as thyme and warm spices. The acidity is moderately high, and the wine is well-balanced with a low alcohol content. On the palate, there are light mineral notes on the finish, with a silky texture.
