Coonawarra has one of the longest growing seasons for Chardonnay in the world, allowing the fruit to develop and ripen slowly, with sufficient natural acidity for palate balance. The finest parcels of fruit from the vineyard adjacent to Bond Road on the Wilgha property in Coonawarra were selected for inclusion in the Bond Road Coonawarra Chardonnay. Fermented in French oak hogsheads, where it remains on yeast lees for six months, this Coonawarra Chardonnay has a complex palate with fresh, vibrant green apple, pear, melon and nectarine primary fruit flavours. A small portion of the wine is encouraged to undergo male-lactic fermentation, which adds softness to the mouth-feel and a slight buttery note to the nose and palate. The resulting Hollick Coonawarra Bond Road Chardonnay is complex and restrained, with a crisp acid finish. This wine was previously referred to as the Reserve Chardonnay due to its complex characteristics.

The Hollick vineyards are located in Coonawarra and Wrattonbully wine regions which are in the South East of South Australia, known as the “Limestone Coastâ€?Wine Zone. At Hollick they work on the general principle of having a very strong ‘Pride of Placeâ€? which refers to the pride and respect for the role played by the ‘placeâ€?in which the Hollick vineyards are grown, the natural characteristics imparted by the vineyard situation, and the influences which our management practices make to the final product. Three premium vineyard sites give Hollick a diversity of some of the best fruit grown in the Coonawarra and Wrattonbully wine regions.
