Infiniment de L’Ou is the consummation of a body of work carried out over the past 10 years. In the warehouse, the grapes undergo complete vinification: immediately after being destalked, they are straight away left to macerate for 3-4 weeks in half-sealed barrels. The barrels are then emptied, the grapes pressed, and then the juice is poured back into the same barrels to mature for 12-14 months. From this meticulous work comes a wine of abundant delicacy, with an explosive, fruity nose and a silky and flavoursome palate. An as-yet-exclusiveLanguedocwine that is nevertheless absolutely perfect to go with the best cuts of meat!
