Jable de Tao is winemaker Carmelo Peña’s expression of the Lanzarote island. A field blend of four native varieties (Malvasía Volcanica, Listán Blanco, Listán Negro and Diego) from a variety of soils and aspects. Carmelo’s intention is to bottle the nuanced terroirs of Lanzarote under a unique wine. The wine is direct pressed into barrel, concrete tanks and large foudres, where it ferments and ages. The wine has hints of lemony cream on the nose followed by limes and green apples. On the palate, it is textured and creamy with hints of lemon rind and a long, saline, mineral finish.
