A one-off cuvée born in 2021 â€?the result of a devastating year marked by storms, mildew, and hail that wiped out over 85% of the harvestâ€?and the result of a beautiful solidarity: 11 grower friends from Champagne stepped in, offering grapes. The result: a 100% Chardonnay cuvée, crafted from 12 different crus. Gentle pressing, élevage on lees, followed by tirage and ageing on laths until disgorgement on 26th of February 2024. Extra-brut, dosage of 1.5 g/L, unfined, unfiltered, tiny amount of sulfur crafted by Cédric (SO2 total: 21 mg/L).
