A blend of 5 grape varieties—Pinot Blanc, Pinot Gris, Sylvaner, Chardonnay, and Gewurztraminer—in equal parts, from vines planted in 1963. Organic and biodynamic farming. A light maceration of less than three days occurs for the Pinot Blanc and Chardonnay, with the rest pressed directly. The juices are blended during fermentation, followed by vinification and aging in barrels (without new oak), on thin lees, for 11 months. Bottled at the estate without fining or filtration, with just a micro-dose of sulfur (1g/hl).
