In the heart of south-western France, Le Passé Authentique embodies the heritage and expertise of the winegrowers of Saint-Mont. Made from the indigenous Gros Manseng, Petit Courbu and Arrufiac grape varieties, this wine draws its richness from the region’s three iconic terroirs, from calcareous clay to tawny sand, offering freshness and aromatic tension. Harvested at dawn to preserve the purity of the fruit, carefully vinified and aged on lees, it reveals a pale yellow colour with green highlights and a complex nose combining grapefruit, peach, lychee and passion fruit. Delicious and lively when young, it gains balance with a few years of ageing, revealing its full potential as one of the great whites of theSouth-West . To be enjoyed as an aperitif, with fish, white meat or sushi, ideally served between 8 and 10°C, this wine proudly carries the past while inspiring the future of the Saint-Mont appellation.
