The House of Louis Jadot has been producing exceptional Burgundy wines since its founding in 1859 by Louis Henry Denis Jadot. For the past 150 years Louis Jadot has continued as one of the great names of Burgundy and has gained international reputation for its superb red and white Burgundy wines. Louis Jadot is not only one of the largest producers of estate Burgundies of the Cote d’Or, it is one of the most celebrated exporters of premium Burgundies, owning close to 140 acres of vineyards from 24 of the most prestigious sites in Burgundy.rrChablis is in the northern part of Burgundy, half way between Dijon and Paris. The continental climate (very cold in winter and hot in the summer with frosts in spring) and the marly limestone soils combine to mould the unique character of Chablis wines. About 3500 hectares are planted (including 856 ha of Premiers and Grands crus) with Chardonnay. rr7 climats can be called Grand Cru in Chablis : Preuses, Bougros, Les Clos, Grenouilles, Blanchot, Valmur and Vaudésir. Those vineyards are all situated on the right side of Le Serein river, on the hill. This situation gives a strong and full-bodied character to the wine.rrAfter a soft pressing, part of the juice is fermented in “double barrelsâ€?of 406 litres produced by our cooperage Cadus. The other part is vinified and aged in stainless steel vats. Aging usually lasts 13 to 15 months on fine lies before bottling. rrWeather in 2021: Devastating frosts in April reduced yields by 50% throughout Burgundy. Chardonnay was particularly hard hit and the crop in Chablis and the Mâconnais was all but wiped out. A cool, wet growing season with a final burst of sunshine in mid September has resulted in classically styled wines with a good deal of acidity and more restrained fruit than in recent years.
