Macarel!–2017–Calimas

Blend of Macabeu, Grenache Blanc and Grenache Gris from 60 to 80-year old vines, complanted on a small 25 ares parcel. Poor shaly soils, light plowing with a horse between the rows. Manuel harvest with small crates. Natural vinification: treading, pressing, natural settling during 24h without temperature control. 22 months of aging in 400-liter wooden vats that have seen several wines. Bottled without fining nor filtration, just a micro dose of sulfur. Total SO2: 17 mg/liter.
