A 100% Chenin cuvée from vines farmed biodynamically, certified by Demeter, planted from a massal selection, aon a parcel that has Orthogneiss subsoils. The grapes were harvested by hand. The work in the cellar is done by gravity so no pump were ever used. Vinification without additives: direct pressing of the whole bunches, and maturation in amphorae for 12 months. Bottled without fining or filtration, and just a micro-dose of sulphur!
