Crafted from sun-dried Pedro Ximénez grapes grown in the albariza soils around the Jerez-Xérès region. Grapes are traditionally sun-dried and then pressed, fortified to around 17.5% ABV, and aged oxidatively for approximately five years in American-oak casks using the solera and criaderas. Aromas of plums, raisins, chocolate and noble oak. The palate is velvety, richly sweet delivering a long, lingering finish with dried fruit and caramel.
