For this Pazo de Seoane, the influence of the Atlantic was milder than in previous years, and the good weather conditions gave the vines the ability to ripen right up to the end of the wine cycle. At the beginning of September, after a little drizzle, the weather allowed the harvest to finish gently. Each variety of grape is treated separately before final blending and bottling. The wine rested on its fine lees, stirred periodically to keep them in suspension, adding complexity to the tasting. Ideal with aperitifs, seafood and fish, it also goes wonderfully well with Asian cuisine of all kinds!
