The Pierre Rapidel cuvée is a creation of the Domaine de la Rectorie, famous in particular for its great Banyuls wines. It is mainly made fromGrenachemacerated for three weeks after fortification. The wine has benefited from a long oxidative ageing process lasting eight years in a century-old cask without topping up. The nose offers intense and complex aromas of dried fruit (almonds, hazelnuts, dried apricots), candied orange peel and cinnamon. Its sweetness balances the power of certain dishes, such as Gorgonzola and Roquefort cheeses, as well as desserts made with intense chocolate.
