Saumaize-Michelin is a 9.5 hectare domaine based in Vergisson, in the heart of the Pouilly-Fuissé appellation. Owned by Roger and Christine Saumaize, the estate has been fully biodynamic since 2005. The vines are now naturally lower-yielding and disease-resistant, 40-45 years old on average and are planted in a patchwork of marl resting on limestone subsoil, resulting in wines with increased complexity. The wines are fermented in 20% new oak barrels using only indigenous yeasts.
