The Domaine des Fines Caillottes, run by Jean Pabiot and son, produces a white wine more than worthy of the Pouilly-Fumé appellation. It is deliciously fresh, with strong citrus and white fruit aromas. The vines are managed sustainably, which adds structure to this cuvée. On the palate, this Pouilly-Fumé is full-bodied, round and fleshy, yet finely textured. The wine is vinified in stainless steel vats and matured on the lees. This vintage can be enjoyed young, but can also be kept for the next 5 years.
