To respect the Passito method, the grapes must be harvested when fully ripe, then left on racks for several weeks so that it becomes dehydrated and concentrated for an aromatic palette. This is often called “raisiningâ€?inFrance . After this transformation, the wine is vinified and aged in barrels. Here we find aromas of marmalade, quince confit and lemon that mingle with notes of almond and honey. The dense and full palate perfectly combines the fine acidity that stretches the wine to infinite lengths. This is a wine for a great tasting experienceâ€?/p>
