The Quintarelli family have perfected an ancient technique called Appassimento (passerillage), whereby the grapes are sorted and then left for several months in a naturally ventilated room. This concentrates the grapes and transforms the primary aromas into tertiary aromas. Although it can be enjoyed young, this wine has good ageing potential.
