The distinctiveness of the Saint-Véran appellation is firstly in its geographic location. In the northern and southern Pouilly-Fuissé appellation, shared among seven villages, it forms a sort of golden belt. Following a typical Burgundy wine making process at Saint-Véran, the lees are kept in suspension through stirring or pumping, to encourage the autolysis of the yeasts by freeing the “fatâ€?part into the wine. It reveals an intensity of ripe fruit and white flowers giving a stylish, rich and full palate while retaining a minerality with notes of lemon and yellow, green pears.
