This Sancerre Blanc is cultivated on Sainte Gemme and Sury-en-Vaux soils, small villages in the Centre-Loire.Half is grown on flinty soil and the other half on limestone. These different terroirs bring complexity to the wine.At harvest time, the grapes are carefully pressed and the juice extracted is decanted about 36 hours later. Alcoholic fermentation starts naturally in a temperature-controlled environment (15-18°C).The wine is then aged for several months on fine lees until it is bottled in the spring.
