New to Tilley’s, the Isolde Cabernet Sauvignon is part of the ‘Barossa Classicâ€?range from Sorby Adams, and a perfect partner to the Tristan Shiraz. This beautiful pairing is inspired by the 12th century Celtic tale of two lovers fated to share a forbidden but undying love.

This wine reveals an inviting and elegant expression of this iconic varietal. It opens with a complex bouquet of dark fruits complemented by a hint of cedar and a touch of tobacco. The Isolde is full-bodied, yet poised with excellent structure. Bold flavours of blackberries and ripe plums lead the charge, while the 24 months spent in French oak imparts flavours of vanilla and a delicate spice. The tannins are firm and well-integrated, providing a smooth, refined mouthfeel that supports the rich fruit and layered complexity.

The wine’s balance between fruit, tannin, and acidity suggests it will age beautifully, gaining further depth over the years.
