In the American Oak Second Fill range, Sullivans Cove offer whiskies of maturity and finesse, drawn from casks seasoned by earlier spirit. Decades of slow ageing in these gentler barrels creates a delicate balance between vibrant fruit and malt character, soft vanilla, and mellow oak spice. In this example the nose needs coaxing to release a fruity aspect, in particular, dried pears, perfectly integrated with the oaky vanillas. The crisp, warming delivery shows a bit of that pickled ginger note that characterised early bottlings, but it’s offset by a soft orchard fruitiness, almost like a young Calvados. The finish is subtle, medium-long, with gentle spices. Reveals the distillery’s elegant side. 15ml sample.

TD0101 was filled into a cask in May 2006 and bottled in June 2023 at47.5% Alc./Vol. 384 bottles produced.
