Sidrologist Eric Bordelet’s Argelette cuvée is made from over one hundred-year-old apple trees planted on schistose pebble soil (from which it takes its name), using an age-old maceration technique. The nose is beautifully complex, with aromas of apples, lemon and spices. The palate is lively and elegant, with fine bubbles. The sweetness is present but discreet for a cider with great balance and length. This very fine signature cider will gain in complexity with a few years’ cellaring.
