Purity is what this wine is all about. Only organic grapes are used, harvested at night to concentrate the aromas and flavours. Once in the bodega a natural fermentation ensues – started by the natural yeast flora in the winery. Cool fermentation then allows the maximum fruit flavours to be extracted, before allowing it to warm up to draw out vital tannins which give weight on the palate. No oak is used during this process. This means that nothing obscures the pure essence of these very special Rioja grapes.
