The Terre de Silex cuvée comes from a plot in the commune of Saint-Père. The vines are planted on Cretaceous flint clays. The unusual concentration of flint in the soil gives the wine its subtle flinty aromas. As soon as the grape harvest arrives, the grapes are gently pressed and the juice left to settle for around 36 hours. The wine is then matured for several months on its fine lees until bottling in the spring. It is this process that gives this white wine its incomparable elegance and presence, and makes it a perfect match for refined dishes such as sushi or tuna carpaccio.
