Always a great talking point, this extraordinary speciality sparkling red wine is based on a cool climate Cabernet-Shiraz blend from vines situated on the Trillians Hills in Clare Valley, South Australia. It is a deep ruby colour with a lively mousse which holds the delicious notes of rich plum and dark berries alongside savoury and spice notes. Powerful dark fruit is well balanced by subtle oak and a soft texture of velvety tannins, with a long and elegant finish. [Shiraz 86%, Cabernet Sauvignon 14%]

The spectacular Clare Valley in South Australia is known as one of the best wine-growing regions on the globe. One of Australia`s oldest wine regions and is probably best known for its Riesling wines. Polish Hill River is a sub-region one and a half hours drive north from Adelaide, with slate soils for a flintier style Riesling. The region is made up of smaller boutique wineries, so you are bound to find amazing gems by those producing on a smaller scale.
