Fermentation of the cherries is followed by distillation. The alcohol is then reduced by adding mountain water from the Vosges. It is ideally served at 6 to 7 degrees.

In 1962 Gilbert succeeded his father Andre Miclo in the family firm. This Alsatian distillery is a strong family concern. They have a full range of liqueurs, eaux de vie and fruit juices which are produced using fruit from throughout France.
