Unlike a PetNat, this sparkling gem undergoes a secondary fermentation by combining fresh Garganega pressed juice and lees with the primary fermented blend. After ageing for 12 months, akin to a Cremant, the result is a perfectly harmonious and delicious sparkling wine.
