Violette–2019–ClaudeNell

Violette 2019 by Clau de Nell is a natural red wine, blend of Cabernet Franc and Cabernet Sauvignon, produced biodynamically by Sylvain Potin in Loire Valley

A blend of about 80% Cabernet Franc (45 to 55 years old) and 20% Cabernet Sauvignon (70 years old), from biodynamic vineyards on clay-loam soils. Harvested by hand using crates, with careful sorting, and yields of 35-40 hl/ha. Vinification: 100% destemmed grapes macerate for about 30 days, without excessive extraction, followed by gentle pressing. Matured 12 months on fine lees in 228-l barrels that have seen 5 to 7 wines, then 6 months in stainless steel vats. Bottled at the estate according to the biodynamic calendar, without fining or filtration.
