The Irish distillery offers a remarkable version, reminiscent of the exceptional Redbreast 25 Years Old distilled in 1991, aged in sherry casks and bottled in 2016. With the naturalness and simplicity befitting the greatest, this whisky offers an alternation of floral, fruity, spicy and tertiary sequences, each more resplendent than the last. Its aromatic and gustatory palette displays dazzling maturity, purity and nobility of expression. Remarkably balanced, the mid-palate reveals particularly moving notes of vanilla pods, toffee, pomegranate and lime blossom honey. The finish leads us to very subtle floral notes. The finish is long and full-bodied with a texture reminiscent of taffeta or white peach. On the aftertaste, strawberries and raspberries enrich an already well-stocked fruity register. Finally, notes of toffee, undergrowth and tobacco underline the tertiary and mature character of the flavour palette.
