The fruit is sourced from our own vineyard in Gippsland. The wine is destemmed without crushing and left on skins for 25 days. We use a mixture of natural and cultured yeast to achieve a balance between fruit and complexity. Elevage for six months in barrel, 10% new barrels. The wine is bottled without filtration or fining.
